Lysozyme is an antimicrobial enzyme that is found in a wide variety of organisms including birds, mammals, plants, insects, and bacteria. The enzyme is produced by submerged fermentation of a finely selected microbial strain followed by purification and formulation. The enzyme works on broad-spectrum of bacteria that are Gram-positive and, in some cases, also Gram-negative with little negative effects. The enzyme even works on some viruses. Therefore, it has been widely used as antimicrobial preservative for food and non-specific immunological factor for feed.

 MECHANISM

Lysozyme hydrolyzes the beta-glycosidic linkage between N-acetylmuramic acid and N-acetyl glucosamine in the peptidoglycan of bacterial cell walls and can also bind polymers of N-acetyl glucosamine, and in this way kills harmful microorganisms, protecting food or from spoilage and animals from diseases.

 DOSAGE RECOMMENDATION

The recommended dosage is 0.01-0.05%. The dosage must be optimized based on each application, the raw material specifications, product expectation and processing parameters. It is better to begin the test with the convenient volume.
